Method
Prep Glass
Rim the glass
Run the lemon wedge around the rim of a highball or pint glass. Spread the coarse salt or celery salt on a small plate and dip the wet rim into the salt to coat evenly. Set the glass aside.
Fill the prepared glass about three-quarters full with ice cubes. Leave room for the mix and garnish.
Make Cocktail
In a cocktail shaker or large mixing glass (no need to shake vigorously), add the vodka, fresh lemon juice, Worcestershire sauce, prepared horseradish, hot sauce, celery salt, smoked paprika (if using), and a few grinds of freshly ground black pepper.
Pour in the tomato juice. Fill the shaker or mixing glass with ice, then gently roll or stir the mixture for 10–15 seconds to chill and slightly dilute the drink. Avoid vigorous shaking to preserve texture.
Taste the mixture and adjust seasoning: add more hot sauce for heat, more Worcestershire for umami, or a pinch more celery salt or horseradish to taste. If it tastes flat, add another 1/4 oz lemon juice.
Strain (or pour) the chilled Bloody Mary into the prepared ice-filled glass.
Garnish & Serve
Place the celery stalk in the glass as a stirrer. Add the lemon wedge on the rim or inside the drink. If using, skewer the olives on a cocktail pick and rest it across the glass or place olives directly in the drink.
Add a final few grinds of black pepper and a small pinch of smoked paprika over the top if desired. Serve immediately.
