Chowder Preparation

Cook the Bacon

In a large pot, cook the bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the bacon fat in the pot.

Sauté the Vegetables

Add the chopped onion and celery to the pot with the bacon fat. Sauté until the onion is translucent, about 5 minutes. Add the minced garlic and sauté for another minute.

Add Potatoes and Broth

Stir in the diced potato, then pour in the chicken broth. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 10-15 minutes.

Add Clams or Haddock

Once the potatoes are tender, add the clams or haddock to the pot along with the heavy cream and dried thyme. Simmer for another 5 minutes, allowing the flavors to meld.

Season and Serve

Season with salt and black pepper to taste. Crumble the cooked bacon and stir it back into the chowder. Serve hot, garnished with chopped parsley.
