Each cake is crispy on the outside and bursting with savory goodness on the inside, served alongside our irresistible housemade tartar sauce for the perfect tangy complement. In a large mixing bowl, combine the chopped clams, all-purpose flour, cornmeal, baking powder, salt, black pepper, garlic powder, egg, and milk. Mix until well combined but do not overmix.
In a deep skillet or fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).
Using a scoop or spoon, drop the batter into the hot oil, frying a few at a time without overcrowding. Fry until golden brown on both sides, about 3-4 minutes each.
Remove the clam cakes from the oil and drain on paper towels. Keep warm while you fry the remaining batches.
In a small bowl, combine the mayonnaise, relish, lemon juice, dijon mustard, salt, and black pepper. Mix until smooth.
Refrigerate the tartar sauce for at least 30 minutes before serving to allow the flavors to meld.
