Clam Cakes

Housemade Tartar Sauce

Preparation

Clam Cakes Preparation

1. Prepare the Batter

In a large mixing bowl, combine the chopped clams, all-purpose flour, cornmeal, baking powder, salt, black pepper, garlic powder, egg, and milk. Mix until well combined but do not overmix.

2. Heat the Oil

In a deep skillet or fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

3. Fry the Clam Cakes

Using a scoop or spoon, drop the batter into the hot oil, frying a few at a time without overcrowding. Fry until golden brown on both sides, about 3-4 minutes each.

4. Drain

Remove the clam cakes from the oil and drain on paper towels. Keep warm while you fry the remaining batches.

Housemade Tartar Sauce Preparation

1. Mix Ingredients

In a small bowl, combine the mayonnaise, relish, lemon juice, dijon mustard, salt, and black pepper. Mix until smooth.

2. Chill

Refrigerate the tartar sauce for at least 30 minutes before serving to allow the flavors to meld.
