Prepare the Dough
In a bowl, dissolve the active dry yeast and sugar in warm water. Let it sit for about 5-10 minutes until frothy. In a separate large mixing bowl, combine the flour and salt. Gradually add the yeast mixture to the flour and mix until a dough forms.
Knead the Dough
Turn the dough out onto a floured surface and knead for about 8-10 minutes until smooth and elastic. Place the dough in a lightly oiled bowl, cover, and let it rise in a warm place for about 1 hour or until doubled in size.
Shape the Bagels
Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a ball and then poke a hole through the center with your finger. Stretch the hole to form a bagel shape.
Boil the Bagels
In a large pot, bring water to a boil and add the baking soda. Carefully drop the bagels into the boiling water, cooking for about 1 minute on each side. Remove and let drain on a wire rack.
Bake the Bagels
Preheat your oven to 425°F (220°C). Place the bagels on a lined baking sheet. If desired, sprinkle your chosen toppings on top of the bagels. Bake for 20-25 minutes or until golden brown.
Cool and Serve
Remove the bagels from the oven and let them cool on a wire rack. Enjoy them warm or toasted with your favorite spreads!
