Prepare the Beets
Preheat your wood oven to 200°C (392°F). Wash the beets thoroughly and trim off the tops and tails. Wrap each beet in aluminum foil with a drizzle of olive oil, salt, and pepper.

Roast the Beets
Place the wrapped beets directly on the hot oven floor or on a baking tray. Roast for approximately 45-60 minutes or until tender when pierced with a fork.

Prepare Apple Gastrique
In a small saucepan, combine apple cider vinegar and honey. Bring to a simmer over medium heat, stirring occasionally until reduced to a syrupy consistency, about 10-15 minutes.

Assemble the Dish
Once the beets are roasted, remove them from the oven and unwrap. Allow them to cool slightly before peeling off the skin. Slice the beets into wedges and arrange on a serving platter. Drizzle with the apple gastrique, crumble the peppered feta on top, and sprinkle with fresh herbs.
