Prepare the Potatoes

Peel and chop the Yukon Gold potatoes into evenly sized chunks. Place them in a large pot and cover with cold water. Add a pinch of salt.

Cook the Potatoes

Bring the pot to a boil over medium-high heat. Once boiling, reduce to a simmer and cook for 15-20 minutes, or until the potatoes are fork-tender.

Prepare Garlic

While the potatoes are cooking, peel the garlic cloves and lightly crush them.

Melt Butter and Infuse Garlic

In a small saucepan, melt the butter over low heat. Add the crushed garlic and let it infuse for about 5 minutes, being careful not to let it brown.

Drain and Mash Potatoes

Once the potatoes are cooked, drain them and return them to the pot. Use a potato masher or ricer to mash them until smooth.

Combine Ingredients

Pour in the infused garlic butter and heavy cream into the mashed potatoes. Stir until combined. Season with salt and black pepper to taste.

Garnish and Serve

Transfer the mashed potatoes to a serving dish and garnish with chopped chives. Serve warm.
