Prepare Spaetzle Dough

In a large bowl, whisk together the flour, eggs, milk, and salt until a smooth dough forms. The consistency should be thick yet pourable.

Cook Spaetzle

Bring a large pot of salted water to a boil. Using a spaetzle maker or a colander with large holes, press the dough through into the boiling water. Cook until the spaetzle float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.

Cook Bacon and Mushrooms

In a large skillet over medium heat, cook the chopped bacon until crispy. Remove bacon and drain on paper towels. In the same skillet, add olive oil and sauté the sliced mushrooms until browned and tender.

Combine Ingredients

Add the cooked spaetzle to the skillet with the mushrooms. Toss to combine and heat through. Stir in the cooked bacon and half of the grated parmesan cheese. Season with black pepper to taste.

Serve

Plate the mushroom bacon spaetzle and top with the remaining parmesan cheese and fresh parsley. Enjoy!
