Prepare the Patties
In a large bowl, combine the ground beef, salt, and black pepper. Mix gently until just combined. Divide the mixture into 4 equal portions and shape each portion into a patty, making a slight indentation in the center to prevent puffing during cooking.
Cook the Patties
Place the patties on the hot flattop and sear for about 3-4 minutes on one side until a golden crust forms. Flip the patties and immediately place a slice of cheese on each patty. Cook for an additional 2-3 minutes until the cheese is melted and the patties are cooked to your desired doneness.
Toast the Buns
While the patties are cooking, cut the burger buns in half and place them cut side down on the flattop until golden brown and toasted, about 1-2 minutes.
Assemble the Burgers
On the bottom half of each toasted bun, layer lettuce, a cheeseburger patty, tomato slices, onion slices, pickles, and your choice of condiments (ketchup, mustard, mayonnaise). Top with the other half of the bun.
Serve
Serve the cheeseburgers immediately with your favorite side dishes.
