Melt the Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Set the bowl over a pot of simmering water (double boiler) and stir occasionally until melted and smooth. Remove from heat and allow to cool slightly.

Whisk the Egg Yolks and Sugar

In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and thick. Add the vanilla extract and a pinch of salt, mixing well.

Combine Chocolate and Egg Mixture

Gradually add the melted chocolate mixture to the egg yolk mixture, stirring continuously until fully combined and smooth.

Beat the Egg Whites

In a clean bowl, whisk the egg whites until soft peaks form. Gradually add a tablespoon of sugar and continue beating until stiff peaks form.

Fold the Egg Whites into the Chocolate Mixture

Gently fold the egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture. Ensure everything is well incorporated.

Chill the Mousse

Spoon the mousse into serving dishes or cups. Cover and refrigerate for at least 2 hours or until set.

Prepare the Whipped Cream

In a mixing bowl, combine heavy cream, powdered sugar, and vanilla extract. Using a hand mixer or whisk, beat the cream until soft peaks form.

Serve the Mousse

Once the mousse has set, remove it from the refrigerator. Dollop the whipped cream on top of each mousse serving before enjoying.
