Select and prepare plantains
Choose 4 ripe plantains: skin should be very yellow with brown/black spots or mostly black for maximum sweetness. Wash and dry them. Cut off both ends with a knife. Make a shallow lengthwise slit through the peel and remove the skin. If plantains are very ripe and sticky, slice lengthwise first to help remove peel. Cut each plantain on the bias into 1/2-inch (about 1.2 cm) thick diagonal slices — this gives more surface area for caramelization.
Heat the oil
Pour about 1 cup (or enough to reach ~1/3 inch depth in a large skillet) of vegetable oil into a large heavy skillet over medium heat. Heat until shimmering but not smoking, about 325–350°F (160–175°C). To test, drop one small piece of plantain in: it should sizzle gently and begin to brown within 30–45 seconds.
Fry the plantains
Working in a single layer (do not overcrowd; fry in batches if needed), add plantain slices to the hot oil cut-side down. Fry 2–3 minutes per side without moving too soon, until the first side is deep golden brown and caramelized. Flip with tongs or a spatula and fry the other side another 2–3 minutes until deeply browned and soft. Adjust heat as needed — if browning too fast, reduce to medium-low so centers soften without burning exterior.

For a richer, glossy finish, melt 2 tablespoons butter in a clean skillet over low heat. Add the drained fried plantains and sprinkle 1 tablespoon brown sugar over them. Gently toss in the skillet for 1–2 minutes until sugar melts and lightly caramelizes, coating the plantains. Remove from heat and, if using, grate 1 teaspoon lime or orange zest over the warm maduros for brightness. Serve immediately.
