Sauté aromatics
While the potatoes cook, heat 1 tablespoon unsalted butter in a 10-inch skillet over medium heat. Add the diced onion and cook until translucent and beginning to brown at the edges, about 5–6 minutes. Add the minced garlic and cook 30–45 seconds until fragrant.
Combine and season
Add the drained, slightly dried potatoes to the skillet with the onions and garlic. Using a potato masher or fork, mash the potatoes to a mostly smooth but slightly textured consistency. Stir in 1 teaspoon ground cumin, 1/2 teaspoon smoked paprika, 3/4 teaspoon salt (adjust remaining salt later), 1/2 teaspoon black pepper, 1 tablespoon lime juice and 1/4 cup chopped cilantro. Cook together over low heat 1–2 minutes to let flavors meld. Taste and adjust seasoning as needed. Remove from heat and let cool until safe to handle, about 8–10 minutes.

Prepare tortillas
Warm the tortillas so they are pliable: wrap stacks of 4–6 in a clean kitchen towel and microwave 20–30 seconds or heat briefly in a dry skillet 15–20 seconds per side. Keep covered to retain warmth. Lightly brush each tortilla with about 1/8 teaspoon oil on one side to help sealing and browning.
Fill and roll
Place about 2 to 3 tablespoons of the potato filling near one edge of a tortilla (on the oiled side). Roll tightly away from you into a flauta shape, tucking the filling as you roll. Secure with a toothpick through the center if desired. Repeat with remaining tortillas and filling; you should get 10–12 flautas depending on filling size.
Heat oil
Pour vegetable oil into a large skillet so it reaches about 1/4 inch depth (roughly 1 to 1 1/2 cups depending on skillet size). Heat over medium-high until shimmering and a small piece of tortilla sizzles immediately (about 350°F if using a thermometer). If using two oils, keep the extra on hand to top up if level drops.
Fry flautas
Working in batches (avoid overcrowding), place flautas seam-side down in the hot oil. Fry, turning occasionally with tongs, until golden brown and crisp on all sides, about 2–3 minutes per side (total 5–6 minutes). Adjust heat as needed so they brown without burning. Transfer to a wire rack set over a baking sheet or paper towels to drain. Sprinkle lightly with 1/2 teaspoon finishing salt while still hot. Remove toothpicks before serving.
Alternative oven-baked method
Preheat oven to 425°F (220°C). Place assembled flautas seam-side down on a parchment-lined baking sheet. Lightly brush each with oil and bake 12–16 minutes, turning once halfway, until crisp and golden. This yields slightly less even browning but is lower in oil.

Arrange shredded lettuce on a serving platter. Place hot flautas on top. Spoon or dollop sour cream/crema and salsa roja or pico de gallo alongside or over each flauta. Sprinkle with crumbled queso fresco or cotija and chopped cilantro if desired. Serve immediately with lime wedges for squeezing.
