Soak the beans
Rinse 2 cups dried red kidney beans under cold water, removing broken beans and debris. Place beans in a large bowl and cover with at least 6 cups cold water. Soak 8 hours or overnight. For a quick soak: bring beans and water to a boil for 2 minutes, remove from heat and let sit 1 hour, then drain.
Cook the beans
Drain soaked beans and rinse. Transfer to a large pot and add 6 cups fresh water, 2 bay leaves, and 3 smashed garlic cloves. Bring to a boil over high heat, then reduce to a gentle simmer. Skim foam that rises. Partially cover and simmer until beans are tender but not falling apart, 60–75 minutes. Start checking at 50 minutes. Add 1 tablespoon coarse salt during the last 10 minutes of cooking. When tender, drain beans, discard bay leaves and garlic, and let beans cool to warm (about 20–30 minutes). Reserve 1/2 cup cooking liquid.
Prepare the marinade
In a medium bowl whisk together 3 tablespoons olive oil, 3 tablespoons white vinegar, 2 tablespoons fresh lime juice, 1 tablespoon brown sugar (or honey), 1 teaspoon ground cumin, 1 teaspoon dried oregano, 1 teaspoon smoked paprika, 1 teaspoon ground black pepper, and 1 teaspoon salt. Whisk until sugar dissolves and mixture is emulsified. If marinade seems too thick, whisk in 1–2 tablespoons reserved bean cooking liquid to loosen.
Combine beans and marinade
Place warm beans in a large bowl. Pour the marinade over the warm beans and gently fold to coat all beans. The warmth helps the beans absorb flavor. If mixture seems dry, add up to the reserved 1/2 cup cooking liquid, 1 tablespoon at a time, until desired sauciness is reached.
Aromatics & Garnish
Marinate and rest: cover the bowl and refrigerate at least 2 hours, preferably overnight, to allow flavors to meld. If serving the same day, let sit at room temperature for 30–60 minutes after marinating for best flavor.
Serve: transfer to a serving bowl. Garnish with extra chopped cilantro and additional sliced scallions if desired. Serve chilled or at room temperature as a side dish, salad topping, or with rice, tacos, or crusty bread.
