Marinated Chicken

Prepare and marinate

Trim any excess fat from the chicken thighs and pat dry with paper towels. Cut thighs into roughly 1/2-inch strips (these will be easier to roll and will cook quickly). In a bowl, whisk together 2 tbsp vegetable oil, 2 tbsp lime juice, minced garlic, ground cumin, smoked paprika, dried oregano, chili powder, kosher salt, black pepper, and chopped cilantro.

Marinate time

Add the chicken strips to the marinade, toss thoroughly to coat, cover, and refrigerate for at least 30 minutes and up to 4 hours. If short on time, marinate 15 minutes at room temperature.

Cook the chicken

Heat a large skillet over medium-high heat and add a splash (1 tbsp) of oil. When the pan is hot, add marinated chicken in a single layer (work in batches if necessary) and sear 3–4 minutes per side until cooked through and lightly charred. Internal temperature should read 165°F (74°C). Remove to a plate and let rest 5 minutes, then shred or finely chop the chicken into small pieces suitable for filling.

Tortillas & Rolling

Warm and prepare tortillas

Stack the corn tortillas and warm them for 30–45 seconds per side on a dry skillet or comal over medium heat to make them pliable. Keep warmed tortillas wrapped in a clean kitchen towel so they stay soft while you assemble.

Dust and fill

Lightly dust each tortilla with a little all-purpose flour (this helps prevent tearing while rolling). Place about 2 tablespoons of shredded chicken along the center of a tortilla and sprinkle approximately 1 tablespoon of shredded Monterey Jack cheese over the chicken. Do not overfill—leave room at the ends to roll.

Roll tightly

Tightly roll the tortilla around the filling, tucking in the edges as you go to form a firm, narrow flauta. Place seam side down on a plate. Repeat until all tortillas are filled; you should have about 10–12 flautas depending on fill amounts.

Heat oil for frying

In a deep skillet or medium saucepan, pour enough vegetable oil to reach about 1/2–3/4 inch depth (roughly 1.5–2 cups depending on pan). Heat over medium-high until shimmering and a small piece of tortilla sizzles immediately and turns golden in about 20–30 seconds (around 350°F / 175°C).

Fry flautas until crisp

Working in batches to avoid crowding, add flautas seam-side down to the hot oil. Fry 1.5–2.5 minutes per side, turning carefully with tongs, until all sides are golden brown and crispy. Remove and drain on a wire rack set over a baking sheet or on paper towels. Sprinkle lightly with fine salt while hot.

Prepare toppings

While flautas fry, prepare the toppings: shred lettuce finely, measure pico de gallo or dice tomatoes, slice pickled jalapeños if using, and shred the cheese (if not pre-shredded). Warm the crema or sour cream slightly so it’s easy to drizzle.

Assemble serving

Place 2–3 flautas on each plate. Add a small handful of shredded lettuce alongside or on top, spoon 1–2 tbsp pico de gallo over the flautas, add a drizzle or dollop of crema/sour cream, sprinkle remaining shredded cheese if desired, and top with pickled jalapeños and cilantro leaves. Serve with lime wedges for squeezing and an extra pinch of fine salt to taste.

Make the drizzle

Whisk together mayonnaise, 1 tbsp lime juice, hot sauce, honey, and 1/4 tsp salt in a small bowl until smooth. Taste and adjust seasoning or hot sauce level. Thin with a teaspoon or two of water if necessary to reach a drizzling consistency.

Finish and serve

Drizzle the citrus-chile sauce over plated flautas or serve on the side for dipping. Enjoy immediately so the flautas remain crisp.
