Method

If making mojo roast pork (optional, 2–4 hours including marinating and roast time)

Make mojo marinade

Whisk together orange juice, lime juice, olive oil, minced garlic, oregano, cumin, salt and pepper in a bowl.

Marinate pork

Place a 2–3 lb pork shoulder or pork loin in a resealable bag or container. Pour half the marinade over the pork, reserving the other half. Refrigerate and marinate at least 1 hour, ideally 4–8 hours or overnight.

Roast pork

Preheat oven to 350°F (175°C). Remove pork from marinade and place on a roasting pan. Roast until internal temperature reaches 145–160°F depending on cut (about 60–120 minutes depending on size). Let rest 10–15 minutes, then thinly slice or shred. Reserve 1–2 tablespoons of cooking juices to moisten slices if desired.

Assemble and cook sandwich

Prepare bread: Cut the loaf horizontally into sandwich-length pieces to make 4 sandwiches (or cut into halves for 2 large sandwiches). If loaf is large, portion into 4 equal sections. Hollow out a thin strip of the soft interior if desired to reduce bulk.

Spread mustard: Spread about 1/2 tablespoon yellow mustard evenly on the cut interior of the bottom half of each sandwich portion and about 1/2 tablespoon on the top half.

Layer fillings: On the bottom half, layer 2 slices ham, 2 slices roast pork (or more to taste), 2 slices Swiss cheese, and 2–3 pickle slices per sandwich portion. Repeat layering for additional sandwiches. Top with the top half of the bread.

Butter exterior: Spread about 1/2 tablespoon softened butter on the outside of both the top and bottom of each assembled sandwich (about 1 tablespoon butter total per sandwich portion).

Heat pan or sandwich press: Preheat a heavy skillet, griddle, or panini press over medium heat. If using a skillet, place a heavy weight (another cast-iron pan or a foil-wrapped brick) to press sandwiches while cooking.

Cook sandwich: Place sandwich in the skillet or press. If using a skillet, set the weight on top. Cook 3–5 minutes per side, or until bread is golden brown and cheese is melted. If using a panini press, cook until crisp and cheese melted, about 4–6 minutes depending on equipment.

Finish and rest: Remove sandwich from heat and let rest 1 minute. Slice each sandwich portion diagonally or down the middle and serve immediately.
