Shrimp & Marinade

    Prepare shrimp

    If using frozen shrimp, thaw completely and pat dry with paper towels. Leave tails on or off per preference; remove vein if still present.

    Make marinade

    In a medium bowl whisk together 1/4 cup coconut milk, 1 tablespoon soy sauce, 1 tablespoon lime juice, 1 teaspoon brown sugar, 1 teaspoon minced garlic, 1/2 teaspoon grated ginger, 1/2 teaspoon curry powder, 1 teaspoon vegetable oil, 1/4 teaspoon kosher salt and 1/8 teaspoon black pepper until smooth.

    Marinate shrimp

    Add the shrimp to the marinade and toss to coat evenly. Cover and refrigerate for 15–30 minutes (no more than 1 hour to avoid over-tenderizing the shrimp).

    Skewer shrimp

    If using bamboo skewers, ensure they were soaked at least 30 minutes. Thread 3–4 shrimp per skewer, sliding them so they lay flat with slight curve to maximize contact with heat. Leave small gaps for even cooking.

    Preheat grill or pan

    Preheat a grill or grill pan over medium-high heat (about 400°F / 200°C). Lightly oil the grates or brush the skewers with a little oil to prevent sticking.

    Cook shrimp

    Place skewers on the hot grill or pan and cook 2–3 minutes per side, turning once, until shrimp are opaque and just curled (internal temperature ~120–130°F). Baste once with leftover marinade during the first turn if desired, but discard any unused marinade that contacted raw shrimp.

    Rest

    Transfer skewers to a plate and let rest 2 minutes before serving to allow juices to settle.

Peanut Dipping Sauce (Home-made)

    Combine sauce ingredients

    In a small saucepan or bowl combine 1/2 cup peanut butter, 1/4 cup coconut milk, 1 tablespoon soy sauce, 1 tablespoon brown sugar, 1 teaspoon rice vinegar, 1 teaspoon lime juice, 1/2 teaspoon sriracha (optional), 1/2 teaspoon minced garlic, and 2 tablespoons water.

    Warm and whisk

    If using a saucepan, warm gently over low heat while whisking until the peanut butter blends smoothly and sauce is glossy, about 2–3 minutes. Do not boil. If using a bowl, whisk vigorously until smooth; microwave 10–15 seconds if needed to loosen.

    Adjust consistency and seasoning

    Add additional water 1 teaspoon at a time to reach a dip-friendly thickness. Taste and adjust with extra soy sauce for saltiness, lime for brightness, or sugar for sweetness. Stir in 1/4 teaspoon toasted sesame oil if using.

    Transfer to a serving bowl and top with 1 tablespoon crushed roasted peanuts for texture.

Garnish & Serving

    Plate and garnish

    Arrange shrimp skewers on a platter with lime wedges and sliced cucumber or pickles on the side. Sprinkle chopped cilantro over the skewers and spoon peanut sauce into a small bowl for dipping.

    Serve immediately while shrimp are hot. Recommend 2 skewers per person as an appetizer or 4 skewers as a light main course.
