Chill glass

Place the martini glass in the freezer for at least 5 minutes or fill it with ice water while you prepare the drink to ensure the glass is well chilled.

Combine spirits

Add the vodka (2 oz) and dry vermouth (0.5 oz) into the mixing glass or shaker.

Add ice and stir

Fill the mixing glass with ice (about 1 cup). Stir gently with the bar spoon for 20–30 seconds until the mixture is well chilled and slightly diluted (the outside of the mixing glass should feel cold). Stirring rather than shaking keeps the spirit clear and silky.

Prepare garnish

If using a lemon twist: use a vegetable peeler or paring knife to cut a 1-inch strip of lemon peel, avoiding too much pith. Express the oils over the chilled glass by holding the peel skin-side down and giving it a quick twist, then rub the rim and drop it into the glass. If using an olive: thread one olive onto a cocktail pick.

Strain and serve

Discard ice or water from the chilled martini glass. Use the strainer to pour the stirred mixture from the mixing glass into the chilled martini glass. Garnish with the prepared lemon twist or olive. Serve immediately.

Rinse and dry the mixing glass, bar spoon, and strainer. Return the martini glass to its place. If you used a shaker, wash and dry it before storing.
