Ribs & Chicken
Prepare ribs
Preheat oven to 275°F (135°C). Remove membrane from the back of the ribs by sliding a knife under it and pulling it off with a paper towel. Trim excess fat. Pat ribs dry with paper towels.
Prepare chicken (for chicken & rib dinners)
If using chicken breast, pound to even thickness (~1/2 in) and pat dry. Lightly oil and season with a pinch of salt and pepper; set aside to grill or roast later alongside ribs during final finish.
Dry Rub
In a bowl, combine brown sugar, sweet paprika, smoked paprika, kosher salt, black pepper, garlic powder, onion powder, dry mustard and cayenne. Mix thoroughly so sugar is evenly distributed.
Generously apply the dry rub to both sides of the ribs, pressing it into the meat. For a full rack, use all the rub; for a half rack, use half. Let the rubbed ribs rest at room temperature for 20–30 minutes or refrigerate for up to 4 hours for deeper flavor.
Low-and-Slow Cooking
Place each rack on a large piece of aluminum foil (meat side up). Add a splash (about 1/4 cup) of apple cider vinegar mixed with apple juice or water to the foil pool to create steam and keep ribs moist.
Tightly wrap the ribs in foil and place on a rimmed baking sheet. Bake in the preheated 275°F oven for 2½ to 3 hours for a full rack (1½–2 hours for a half rack) until the meat is tender and pulls back from the bones about 1/4–1/2 inch.
Basting & Finishing
Remove ribs from oven and carefully open the foil. Pour off any excess liquid into a small saucepan and reserve. Brush the ribs lightly with softened butter.
Preheat a grill or set the oven to broil. Baste the ribs with the warmed BBQ sauce and grill or broil for 3–5 minutes per side, brushing once more, until sauce caramelizes and edges char slightly. If finishing chicken on the grill, grill chicken breasts 4–6 minutes per side until internal temperature reaches 165°F (74°C), basting with sauce during the last 4 minutes.
Let ribs rest 5–8 minutes, then slice between bones into portions: full rack (serves 2–3), half rack (serves 1–2), or pair a half rack with grilled chicken breast for the chicken & rib dinner.
Sides
Fries / Tater tots / Waffle fries: Bake or fry according to package or fry recipe instructions until golden and crisp. If frying, heat oil to 350–375°F and fry in batches 3–5 minutes until golden; drain on paper towels and season with salt immediately.
Loaded baked potato: Bake a medium russet potato at 400°F for 45–60 minutes until tender, or microwave on high 8–12 minutes turning once. Split open, mash slightly with butter, then top with shredded cheddar, crumbled bacon and a dollop of sour cream.
Coleslaw: Toss shredded cabbage and carrots with a dressing of mayonnaise, a splash of apple cider vinegar, 1 tsp sugar, salt and pepper to taste; chill until serving.
Salad or Cup
Side salad: Combine mixed greens, sliced tomato and cucumber. Drizzle with chosen dressing just before serving.
Cup of soup: Reheat soup to a simmer on the stove and serve hot as the accompaniment.
Plating & Serving
Assemble the dinner: Place the selected rib portion (full or half) or rib plus grilled chicken on a plate. Add chosen side (fries/tots/waffle fries/loaded baked potato/coleslaw) and either a side salad or a cup of soup. Spoon extra warmed barbecue sauce on the side for dipping.
Offer napkins and wet wipes. Serve immediately while hot.
