Cocktail
Chill glass
Place a rocks glass in the freezer or fill it with ice water to chill while you prepare the cocktail.
Combine ingredients
In a mixing glass, add 2 oz bourbon (a 6-year bourbon if available), 0.5 oz aged dark rum, 0.5 oz demerara syrup, 0.25 oz amaro, 2 dashes Angostura bitters, and 1 dash orange bitters.
Stir with ice
Fill the mixing glass with large ice, then stir briskly for 20–30 seconds (about 15–20 full strokes) until the mixture is well chilled and properly diluted (about 20–25°F drop).
Prepare serving glass
Discard the ice water from the chilled rocks glass (if used) and add a single large ice cube or sphere.
Strain
Strain the mixed cocktail into the prepared rocks glass over the large ice cube.
Express orange oil
Take an orange peel and hold it over the drink, skin side down. Give it a firm twist to express the oils over the surface, then run the peel around the glass rim and drop it into the drink as garnish.
Serve
Serve immediately. Sip slowly to appreciate the layered notes from the 6-year whiskey, rum, and amaro.
