Method
Preparation
Chill glass
Place a coupe or old-fashioned glass in the freezer or fill it with ice water to chill while you mix the drink.
Dry shake (if using egg white)
If using egg white for a silky froth, add the Myer's Dark Rum, fresh lime juice, rich simple syrup, orange curaçao, Angostura bitters, and egg white to a cocktail shaker without ice. Seal and shake vigorously for 12–15 seconds to emulsify and produce froth.
Wet shake
Add a large handful of ice to the shaker (or discard the ice water from the chilled glass). Seal and shake vigorously for 10–15 seconds until the outside of the shaker is very cold and the drink is well chilled and slightly diluted.
Strain and serve
Double-strain the cocktail through a Hawthorne strainer and a fine mesh strainer into the chilled coupe or old-fashioned glass over fresh cracked ice (for an on-the-rocks presentation) or without ice for a neat coupe presentation.
Garnish
Garnish with a lime wheel or twist on the rim. If desired, grate a light dusting of fresh nutmeg over the foam (if egg white was used) or directly over the drink for aromatic complexity.
Finish
Serve immediately. Sip and enjoy the deep molasses, caramel, and baking-spice notes of the Myers's Dark Rum balanced by citrus, orange, and bitters.
