Cut and freeze cheese

If using a mozzarella block, cut into 12 uniform sticks about 3/4 inch x 3 inches. If using preformed string cheese, leave whole. Place the cheese sticks on a parchment-lined tray in a single layer and freeze for at least 60 minutes (preferably 90–120 minutes). Freezing prevents cheese from melting too quickly during frying.

Set up breading station

Place the flour in a shallow bowl. In a second shallow bowl whisk together the eggs and milk until smooth. In a third shallow bowl combine the breadcrumbs, grated Parmesan, Italian seasoning, garlic powder, onion powder, kosher salt, and black pepper; mix thoroughly.

First coat - flour

Working with frozen cheese sticks, one at a time, toss each stick in the flour to coat evenly, shaking off excess. Return to the tray as you go.

Second coat - egg

Dip each floured stick into the egg wash, fully coating it. Let excess egg drip back into the bowl.

Third coat - breadcrumbs

Press the egg-coated stick firmly into the breadcrumb mixture, ensuring an even, compact coating. For an extra-crisp double coating, repeat the egg wash and breadcrumb step a second time. Place breaded sticks back on the parchment-lined tray.

Freeze again

After breading, freeze the coated mozzarella sticks on the tray for at least 30 minutes (ideally 60 minutes). This helps the coating set and further prevents cheese leakage when frying.

Fry & Serve

Heat oil

Pour oil into a deep heavy-bottomed pot or deep fryer to a depth of about 2–3 inches (about 3–4 cups depending on your vessel). Heat the oil to 350°F (175°C). If you don't have a thermometer, test with a small piece of bread: it should brown in about 60 seconds.

Fry mozzarella sticks

Fry the frozen, breaded sticks in batches (do not overcrowd) for 30–60 seconds per side, turning as needed, until golden brown and crisp. Total fry time should be about 1 to 1.5 minutes. Remove with a slotted spoon or spider and transfer to a paper towel-lined tray to drain. If they are browning too quickly and the interior is not melted, reduce heat slightly.

Alternative - oven or air fryer

For oven: preheat to 425°F (220°C). Place breaded sticks on a lightly oiled baking sheet and bake 8–10 minutes, flipping halfway, until golden and cheese is melted. For air fryer: preheat to 400°F (200°C) and air-fry in a single layer for 6–8 minutes, flipping once.

Serve

Serve hot with warmed pizza sauce for dipping. Garnish with additional grated Parmesan or chopped parsley if desired. Advise guests to allow the first bite to cool slightly to avoid hot melted cheese.
