Form patties

Divide the ground beef into 4 equal portions (about 4 oz each). Gently form each portion into a patty roughly 3.5 to 4 inches wide and about 3/4 inch thick. Do not overwork the meat. Make a shallow dimple in the center of each patty with your thumb — this helps the patty cook evenly and prevents excessive doming.

Season patties

Season both sides of each patty evenly with kosher salt and freshly ground black pepper. If using, brush or sprinkle each patty with about 1/4 teaspoon Worcestershire sauce for extra flavor.

Preheat pan or grill

Heat a heavy skillet or cast-iron pan (or preheat grill) over medium-high heat until very hot — about 3 to 5 minutes. Add 1 tablespoon vegetable oil to the pan and spread to coat if using a pan. Oil prevents sticking and promotes a good sear.

Cook patties

Place patties on the hot surface leaving space between them. Cook undisturbed for 3 to 4 minutes until a brown crust forms on the bottom. Flip once and cook another 3 minutes for medium (adjust +/− 1 minute for desired doneness). For cheeseburgers: place a slice of cheese on each patty in the last 60 seconds of cooking and cover the pan or close the grill lid to melt the cheese.

Rest patties

Transfer cooked patties to a plate and let rest 2 to 3 minutes. Resting helps redistribute juices so they don't run out when you bite into the burger.

Toppings & Assembly

Toast buns

While patties rest, spread softened butter on the cut sides of the hamburger buns. Place buns cut-side down on the hot skillet or grill for 30 to 60 seconds until golden and lightly crisp. Watch carefully to avoid burning.

Prepare produce

Slice the tomato into four thick slices. Separate and dry lettuce leaves. Thinly slice the red onion into rings and have pickle slices ready.

Assemble burgers

On each bottom bun, spread about 1 teaspoon mayonnaise and 1 teaspoon mustard (or arrange condiments to taste). Place a lettuce leaf on the bottom bun, then a tomato slice, then the rested patty (cheese-side up if used). Top with 2 pickle slices and a few red onion rings, then squeeze or spread about 1 teaspoon ketchup on the top bun and place it on the burger.

Serve

Serve the hamburgers immediately while hot. Offer extra condiments at the table.
