Method
Burger Patties
Form patties
Divide the ground beef into two equal portions (about 8 oz each). Gently form each portion into a patty about 3/4 to 1 inch thick and slightly wider than the bun. Avoid overworking the meat—handle just enough to shape. Make a shallow dimple in the center of each patty with your thumb to reduce bulging while cooking.
Season
Season both sides of each patty evenly with about 1/2 teaspoon kosher salt and 1/4 teaspoon freshly ground black pepper per patty (total quantities listed are for both patties).
Cook patties
Heat a large skillet or cast-iron pan over medium-high heat and add 1 tablespoon vegetable oil. When the oil is shimmering and the pan is hot (but not smoking), add the patties. Cook without moving for 3-4 minutes until a brown crust forms. Flip and cook on the second side for 2-3 minutes for medium-rare to medium, or longer to reach desired doneness (internal temp 160°F / 71°C for well done).

Assemble sauce
In a small bowl, mix the mayonnaise, yellow mustard, and ketchup until smooth. Taste and adjust ratios to preference.
Assemble burger
Place a toasted bottom bun on a plate, spread about 1 tablespoon of the sauce on it, add lettuce, then the cheeseburger patty, top with tomato slices, onion rings, and pickle slices as desired. Spread remaining sauce on the top bun and place on the burger.
Serve
Serve immediately while hot with your choice of sides (fries, chips, or a simple salad).
Toppings (optional)
Use the listed toppings as desired. Wash lettuce and tomato; slice tomato into 1/4-inch rounds and slice onion into rings. Add to the burger after placing the patty so they stay fresh and crisp. Adjust quantities per burger preference.
