Prep Canned Ingredients

Open all cans. Drain each can (chickpeas, diced tomatoes, sweet corn, black beans) into a colander. Rinse the chickpeas and black beans under cold running water for about 20–30 seconds to remove excess sodium and canned flavor. Shake to remove excess water and let drain while you prep other items.

If you prefer softer chickpeas for a more 'salad-like' texture, gently smash about 1/2 cup of the drained chickpeas with the back of a spoon and then return to the bowl — this creates some creaminess while preserving whole beans for texture contrast.

Vegetables & Fresh Add-ins

Finely dice the red bell pepper and red onion. Seed and dice the cucumber if using. Chop the parsley or cilantro. Add all prepared vegetables and herbs to a large mixing bowl with the drained canned ingredients.

Make the Dressing

Whisk the vinaigrette

In a small bowl or jar with a tight lid, combine the olive oil, apple cider vinegar (or canned lemon juice), Dijon mustard, honey or maple syrup, garlic powder, smoked paprika, ground cumin, salt, and black pepper. Whisk vigorously or shake the jar until the dressing is emulsified and smooth (about 20–30 seconds). Taste and adjust seasoning: add more vinegar/lemon for brightness, more honey for sweetness, or more salt if needed.

Assemble Carbliss

Pour the dressing over the bowl that contains the drained canned ingredients and chopped vegetables. Use a large spoon or spatula to gently toss everything together until evenly coated. If you smashed a portion of chickpeas, fold gently to keep a mix of textures.

Let the salad rest in the refrigerator for at least 15–20 minutes to allow flavors to marry. If serving immediately, 5 minutes is okay, but the flavor improves after resting.

Finish & Serve

Taste and adjust seasoning one more time just before serving. Add additional salt, pepper, or a splash more vinegar/lemon if needed.

Top with optional crumbled feta or cotija, toasted pumpkin seeds or chopped nuts, and extra chopped herbs if using. Serve chilled or at cool room temperature as a side dish, light main, or spoon onto lettuce leaves or toast for a carbliss bowl.

Store leftovers in an airtight container in the refrigerator for up to 3–4 days. If salad becomes dry, stir in a little extra olive oil or vinegar before serving.
