Prepare glass

Choose a rocks glass (old-fashioned). If you prefer the drink slightly cooler, place the glass in the freezer for a few minutes or fill it with ice and water to chill, then discard the water before pouring.

Add ingredients to mixing glass

In a mixing glass or shaker, combine 2 oz Bacardi 8 (or another good-quality aged rum), 0.25 oz simple syrup, 0.5 oz fresh lime juice, and 2 dashes of Angostura bitters.

Add ice and stir

Add a generous amount of ice (enough to fill the mixing glass). Stir gently but thoroughly for about 20–30 seconds (10–15 full strokes) until the mixture is well chilled and slightly diluted.

Strain and serve

Discard the chilling ice from the prepared rocks glass if used. Place one large ice cube or fresh ice in the glass. Strain the chilled cocktail into the rocks glass over the ice.

Garnish

Express the oils of an orange twist over the surface of the drink by holding the twist skin-side down and giving it a quick pinch above the glass, then rub the rim with the twist and drop it into the drink.

Serve immediately. Optional: For a slightly richer presentation, rinse the glass briefly with a few drops of aged rum before pouring the cocktail (add 1/4 tsp Bacardi 8 to the glass, swirl, discard excess).
