Prepare bacon & bread

Cook bacon

Place bacon strips in a cold skillet spaced slightly apart. Cook over medium heat, turning occasionally, until crisp and browned, about 8–10 minutes. Transfer to a paper towel‑lined plate to drain and keep warm.

Toast rolls

While bacon cooks (or after), split the rolls and brush cut sides lightly with olive oil or spread a little butter. Toast cut sides in a hot skillet or under a broiler until golden, about 1–2 minutes per side. Remove and set aside.

Prepare cream cheese spread & avocado

Make cream cheese spread

Place the softened cream cheese in a small bowl. Add 1/2 tsp black pepper and 1/4 tsp salt (from the seasoning), and stir until smooth. If using, stir in the optional hot sauce or 1/2 tsp prepared horseradish for a mild kick. Taste and adjust seasoning.

Prepare avocado

Cut the avocado in half, remove the pit, and scoop flesh into a bowl. Add 1 tsp lemon juice, 1/4 tsp salt and the remaining 1/2 tsp black pepper. Mash with a fork to a chunky spread (or leave slices if preferred).

Assemble sandwich

Spread about half of the cream cheese mixture evenly on the bottom half of each toasted roll (about 2 oz total spread across two rolls).

Top the cream cheese with the roast beef, dividing evenly (about 4 oz per sandwich). Fan or pile the slices so they overlap.

Spoon or place half of the mashed avocado (about 1/2 avocado per sandwich) on top of the roast beef, spreading gently.

Add two bacon strips per sandwich on top of the avocado.

If using, add lettuce leaves and two tomato slices per sandwich. Sprinkle a light pinch of the remaining 1/2 tsp salt over the tomato if desired.

Place the top roll over the assembled ingredients. Press lightly to compact.

Finish & serve

Optional: If you prefer the sandwich warm and slightly melty, return the assembled sandwich to a skillet over low heat, press with a spatula, and warm 1–2 minutes per side until heated through and cream cheese softens slightly.

Cut the sandwich in half on a bias and serve immediately. Serve any remaining avocado or cream cheese on the side.
