Sandwich

Method

Prep

1

Remove the cream cheese from the refrigerator so it softens at room temperature for easier spreading (about 10–15 minutes).

2

If using a whole avocado, slice it in half, remove the pit, scoop the flesh into a bowl and mash lightly with a fork. Add the lemon juice, 1/4 tsp salt and 1/8 tsp black pepper; mix to combine. Set aside. If using pre-sliced avocado, arrange slices and toss gently with lemon juice and a pinch of salt to prevent browning.

3

Slice the ciabatta roll in half horizontally. If desired, spread the cut sides lightly with butter and set aside for toasting.

Cook Bacon

4

Heat a large skillet over medium heat and add 1 tsp oil. When the oil is shimmering, add the bacon strips in a single layer. Cook 3–4 minutes per side for thick-cut bacon, or until crisp to your liking. Transfer bacon to a plate lined with paper towels to drain. Reserve 1 tsp of bacon fat in the pan for a flavor boost (optional).

5

Oven method (alternative)

Preheat oven to 400°F (200°C). Arrange bacon on a wire rack over a rimmed baking sheet and bake 12–18 minutes until crisp. Transfer to paper towels to drain.

Assemble & Toast

6

If you buttered the bread, heat a clean skillet over medium-low. Place roll cut-side down and toast until golden (about 1–2 minutes). Alternatively, toast under a broiler for 1–2 minutes watching carefully. Remove from heat.

7

Spread 2 tablespoons of softened cream cheese evenly over the bottom half of the roll. On the top half, spread the remaining 2 tablespoons of cream cheese (this creates a creamy barrier and keeps the sandwich from getting soggy).

8

Layer the ingredients on the bottom half in this order for best texture: baby spinach (if using), 6 oz sliced turkey (folded or piled loosely), mashed avocado (spread evenly), tomato slices and red onion rings (if using), and finally the crispy bacon strips. Season the avocado/tomato layers with the remaining 3/4 tsp salt and 3/8 tsp black pepper divided as desired.

9

Close the sandwich with the top half of the roll and press gently to compact.

Finish

10

Optional: For a warm pressed sandwich, return the assembled sandwich to the skillet and press with a heavy spatula or a panini press over medium-low heat for 2–3 minutes per side until warmed and browned, being careful not to melt the cream cheese excessively.

11

Using a serrated knife, cut the sandwich in half. Serve immediately.
