Buttermilk Ranch Dressing
Combine base
In a medium bowl, whisk together 1/2 cup mayonnaise, 2 tablespoons sour cream and 1/4 cup buttermilk until smooth.
Add 1 tablespoon finely chopped chives, 1 tablespoon finely chopped parsley, 1/2 teaspoon garlic powder, 1/4 teaspoon onion powder, 1/4 teaspoon dried dill, 1 teaspoon lemon juice, 1/2 teaspoon kosher salt and 1/4 teaspoon freshly ground black pepper. Whisk to combine.
Taste and adjust seasoning — add up to another tablespoon of buttermilk if you prefer a thinner consistency, or more salt/pepper to taste. Chill in the refrigerator for at least 15 minutes to let flavors meld (can be made up to 24 hours ahead).
Sandwich Assembly & Toasting
Cook the bacon: If bacon is not already cooked, cook 6 slices in a skillet over medium heat until crisp, about 8–10 minutes, turning as needed. Transfer to a paper towel–lined plate to drain. Alternatively bake on a rimmed sheet at 400°F (200°C) for 12–15 minutes until crisp. When cool, break each slice in half if needed to fit the roll.
Prepare the roll: Split 2 sandwich rolls lengthwise. Spread about 1 teaspoon softened butter on the cut faces of each roll. Place cut-side down in a preheated nonstick skillet over medium heat (or under a broiler) and toast until golden and slightly crisp, about 1–2 minutes in a skillet or 1–2 minutes under a medium broil. Watch carefully to avoid burning.
Warm the turkey (optional): If you prefer warm turkey, stack the 8 oz of sliced turkey on a plate and microwave in 20–30 second intervals until just warm (about 20–40 seconds), or briefly warm in a skillet for 1–2 minutes per side. Keep warm.
Assemble sandwiches: On the bottom half of each toasted roll, spoon about 1.5 tablespoons of the chilled buttermilk ranch dressing and spread lightly. Layer half of the turkey (about 4 oz) over the dressing, then place 2 slices of sharp cheddar on top of the turkey. Add 3 slices of crisp bacon (or broken pieces), then 2 leaves of lettuce. Drizzle another 1.5 tablespoons of ranch over the lettuce, if desired.
Cap with the top half of the roll. Press gently, cut each sandwich in half if desired, and serve immediately.
