Method
Prep
Preheat the oven to 350°F (175°C). Line a large baking sheet or an oven-safe platter with parchment paper or foil for easier cleanup.
Dice the tomatoes, finely dice the red onion, and dice the Greek bell peppers. Place each in a small bowl and set aside.
Soften the cream cheese by leaving it at room temperature for 15–20 minutes or microwave in 10-second bursts until spreadable (do not melt).
Cook the bacon in a skillet over medium heat until crisp, about 6–8 minutes, turning as needed. Drain on paper towels and crumble when cool. Alternatively, bake bacon at 400°F (200°C) for 12–15 minutes until crisp.
Assemble & Bake
Arrange chips and cheese
Spread the tortilla chips in an even single layer (slightly overlapping is fine) across the prepared baking sheet or platter. Pour the nacho cheese sauce evenly over the chips, focusing on distributing it so many chips are coated. If using shredded cheddar for extra melt, sprinkle it evenly on top of the chips now.
Warm in oven
Place the baking sheet in the preheated oven and bake for 6–8 minutes, or until the cheese sauce is warmed through and any added shredded cheese has melted. Watch closely to prevent chips from burning.
Finish & Serve
Remove the nachos from the oven. Dollop softened cream cheese over the hot nachos in small spoonfuls so it softens and spreads slightly from the residual heat. Alternatively, for a smoother spread, whisk the softened cream cheese with 1–2 tablespoons of milk until pourable and drizzle in small amounts.
Evenly scatter the diced tomatoes, red onion, and diced Greek peppers over the nachos.
Top with the diced avocado, spreading gently to avoid mashing. Sprinkle the crumbled bacon (fresh bacon bits) evenly across the top.
Season the assembled nachos with the measured salt and black pepper (adjust to taste). Garnish with chopped cilantro if using and serve immediately with lime wedges on the side for squeezing over individual portions.
