Method
Prepare Garlic Cheese Bread
Preheat your broiler or oven to 425°F (220°C) on the top-heat setting. Line a baking sheet with foil.
In a small bowl, combine the softened butter and grated Parmesan until smooth.
Spread about 1/2 tablespoon of the butter-Parmesan mixture evenly on each slice of garlic cheese bread.
Place the bread on the prepared baking sheet and broil or bake for 4–6 minutes until the edges are golden and the cheese topping is bubbly. Watch closely to avoid burning. Remove and let cool slightly.
Make Spread & Toss Pastrami
In a small bowl, whisk together the mayonnaise, Italian dressing, lemon juice, and 1/4 teaspoon black pepper until combined. Taste and adjust acidity or seasoning as desired.
Place the thinly sliced pastrami on a cutting board and coarsely chop into bite-sized pieces (about 1/2 inch). Transfer to a medium bowl.
Add 1 tablespoon of the mayo/Italian mixture to the chopped pastrami and toss gently to moisten and season. Reserve remaining spread for the bread.
Prepare Avocado & Vegetables
If using, very thinly slice the red onion. Rinse and pat the lettuce leaves dry and trim to bread size if necessary.
Assemble Sandwiches
Spread about 1 tablespoon of the remaining mayo/Italian dressing mixture over the cut side of two bread slices (these will be the bottoms).
Distribute the dressed chopped pastrami evenly over the two bread slices.
Top the pastrami with the sliced or torn Swiss cheese (2 oz per sandwich). If you prefer melted cheese, return the open-faced sandwiches briefly to the broiler for 30–45 seconds until the Swiss softens—watch carefully.
Spoon or spread the seasoned mashed avocado over the cheese layer.
Scatter the thinly sliced red onion and place the lettuce leaves on top. Add pickle slices if desired.
Close the sandwiches with the remaining two garlic cheese bread slices (toasted side up), press gently, and slice each sandwich in half.
Serve
Plate the Malibu sandwiches and serve immediately while the bread is still warm and crisp. Provide extra Italian dressing or mayo on the side if desired.
