Prepare spreads
Bring the cream cheese to room temperature (if refrigerated) so it spreads easily. In a small bowl, stir together the softened cream cheese and mayonnaise until smooth and combined, about 20–30 seconds. This creates a creamy spread that balances the cranberry’s sweetness.
Toast bread (optional)
If you prefer a slightly crisp texture, lightly toast the two slices of wheat bread until just golden (about 1–2 minutes in a toaster). Allow to cool slightly so spreads don’t melt off.
Assemble base
Spread the cream cheese–mayonnaise mixture evenly over one slice of bread, covering the surface to the edges. On the other slice, spread the cranberry sauce evenly. If the cranberry sauce is very thick, use the back of a spoon to smooth it out into a thin layer.
Add turkey and greens
Arrange the 4 oz of sliced roasted turkey evenly over the cream cheese–mayo side, overlapping slices slightly for full coverage. Pile the baby spinach leaves on top of the turkey, distributing them so each bite will have some greens (press down lightly).
Finish with seeds and seasoning
Sprinkle the roasted sunflower seeds evenly over the spinach. Lightly season the spinach and exposed turkey with the kosher salt (about 1/4 tsp) and freshly ground black pepper (about 1 tsp) to taste. The seeds add crunch and a nutty flavor to contrast the creamy and sweet elements.
Close, press and slice
Place the cranberry-sauced slice of bread on top of the layered slice, sauce side down. Press the sandwich gently but firmly to help the ingredients bind. If desired, cut the sandwich in half diagonally to serve.
