Caramelized Onions

Prepare onions
Heat a large skillet over medium heat. Add 1 tablespoon olive oil and 1 tablespoon butter. When butter foams, add the thinly sliced onions and 1/4 teaspoon salt; stir to coat.

Caramelize
Cook onions, stirring every 2–3 minutes, lowering heat if browning too quickly. After about 15 minutes they will begin to soften and color. Sprinkle 1 teaspoon brown sugar and continue to cook another 8–10 minutes until deep golden and jammy.

Finish
Stir in 1 teaspoon balsamic vinegar, cook 1 minute more, then remove from heat and set aside in a bowl. Keep warm while you cook the rest.

Make sauce
In a small bowl combine 3 tablespoons mayonnaise, 1 tablespoon ketchup, 1 teaspoon Dijon mustard, 1 teaspoon pickled dill relish, 1 teaspoon apple cider vinegar, 1 teaspoon smoked paprika and 1/2 tsp hot sauce (optional). Whisk until smooth and taste; adjust salt if needed. Chill until assembly.

Prepare cheese
If using a log-style garlic herb cheese, slice into two 2-ounce discs (or soften slightly and spread). Reserve at room temperature so it melts quickly on the patties.
Burger Patties & Cooking

Form patties
Divide 1 lb ground beef into two equal portions (about 8 oz each). Gently form into 3/4" thick patties, making a shallow 1/2" dimple in the center of each to reduce dome-shaped puffing. Season both sides with 1 teaspoon kosher salt, 1 teaspoon freshly ground black pepper and 1 teaspoon garlic powder.

Sear patties
Heat a heavy skillet or cast-iron pan over medium-high heat until very hot. Add 1 tablespoon softened butter and let it melt and foam. Place patties in the pan and cook undisturbed for 3–4 minutes until a brown crust forms.

Finish cooking & melt cheese
Flip patties and immediately place 2 oz garlic herb cheese on each patty. Reduce heat to medium and cook another 3–4 minutes for medium doneness (internal temp ~155°F/68°C) or longer for desired doneness. Cover pan with a lid for 30–60 seconds if you want extra melted cheese.
Buns & Toasting

Toast brioche buns
Spread about 1 tablespoon softened butter across the insides of the 2 brioche buns. In a clean skillet over medium heat, toast the buns butter-side down until golden brown, about 1–2 minutes. Remove and keep warm.
Assembly & Finish

Assemble burgers
Spread 1–2 tablespoons of the 'secret' burger sauce on both the top and bottom bun halves. On the bottom bun place a layer of lettuce leaves, then the cheese-topped patty, 2 slices of crisp bacon per burger, a generous spoonful of caramelized onions, and 2–3 tomato slices. Season tomato lightly with a pinch of coarse sea salt and 1/8 teaspoon freshly ground black pepper.

Serve
Place the top bun, press gently and serve immediately with extra sauce on the side if desired. Estimated internal temperature should be checked to ensure safe doneness. Enjoy.
