Teriyaki Chicken

Prep chicken
Pat the chicken dry with paper towels. If breasts are thick, slice horizontally to make 1/2-inch cutlets or pound gently to even thickness so they cook quickly and evenly. Season both sides lightly with 1/4 tsp salt and 1/4 tsp black pepper.

Cook chicken
Heat 1 tsp vegetable oil in a nonstick or cast-iron skillet over medium-high heat until shimmering. Add chicken and cook 4–5 minutes per side, until nicely browned and an instant-read thermometer inserted into the thickest part reads 165°F (74°C).

Glaze with teriyaki
Reduce heat to medium-low. Pour 1 tablespoon teriyaki sauce over the chicken and turn to coat, cooking 30–60 seconds more until sauce is sticky and glossy. Remove from pan and let rest 5 minutes, then slice chicken into 1/4- to 1/2-inch strips.
Ginger-Sesame Dressing

Whisk together 3 tablespoons soy sauce, 2 tablespoons rice vinegar, 1 tablespoon neutral oil, 1 teaspoon toasted sesame oil, and 1 teaspoon honey (or brown sugar) in a small bowl. Add 1 teaspoon grated fresh ginger, 1/2 teaspoon minced garlic, 1 teaspoon toasted sesame seeds and 1/2 teaspoon sriracha or chili-garlic sauce if using. Taste and, if the dressing is too strong, whisk in up to 1 teaspoon water to reach desired consistency. Adjust sweetness or acidity to taste (add a little more honey or vinegar).
Salad Assembly

In a large bowl, combine 6 cups spring mix and 1 cup thinly sliced cabbage. Toss gently to combine.

Add 1 cup julienned carrots, 1 medium thinly sliced red bell pepper, and 1 cup mandarin orange segments. Toss lightly to distribute ingredients evenly.

Add the sliced teriyaki chicken to the salad and drizzle about half of the ginger-sesame dressing over everything. Toss gently to coat — add more dressing to taste but avoid overdressing.

Top the salad with 1 ounce toasted sliced almonds, 1 cup crispy wonton strips, and 1 tablespoon toasted sesame seeds. Serve immediately so wontons remain crisp.
