Base Cocktail

Method

Prepare & Shake

1

Build the cocktail

Add white rum, banana liqueur, 151-proof rum, blackberry liqueur, passion fruit syrup, orgeat, pineapple juice, orange juice, lime juice, and tiki bitters into a cocktail shaker or Boston shaker half-filled with ice.

2

Shake vigorously for 10–15 seconds until the exterior of the shaker is frosty and the ingredients are well-chilled and slightly diluted.

Strain & Serve

3

Fill a large tiki mug or highball glass with crushed ice (about 1 cup). Double-strain the shaken mixture into the glass over the crushed ice to remove small ice chips and any pulp.

4

Dark rum float

Carefully pour the dark rum (0.25 oz) over the back of a bar spoon held just above the drink surface so it floats on top, creating a dark rum float.

Garnish

5

Garnish with a pineapple wedge and an orange wheel on the rim, tuck a mint sprig into the crushed ice, and optionally add a fresh or dehydrated blackberry on a cocktail pick.

6

Serve immediately with a straw and a small stirrer so the drinker can incorporate the float if desired.
