Prepare shrimp and marinade
Pat shrimp dry with paper towels and place in a medium bowl. Add lime juice, olive oil, paprika, cayenne, minced garlic, salt, and black pepper. Toss until shrimp are evenly coated. Cover and refrigerate for 10–20 minutes (no longer than 30 minutes) to avoid the acid cooking the shrimp.
While shrimp marinates, set a large skillet over medium-high heat and allow it to get hot. This ensures a quick sear that preserves texture.
Ruby Red Sauce
Add the grapefruit juice, honey, and soy sauce. Bring the mixture to a gentle simmer, scraping any tomato paste from the bottom. Taste and add a pinch of red pepper flakes for heat.
Thicken sauce
In a small bowl, whisk the cornstarch with the cold water until smooth to make a slurry. Gradually whisk the slurry into the simmering sauce and cook 1–2 minutes until slightly thickened and glossy. If sauce becomes too thick, add up to 1–2 tablespoons additional grapefruit juice or water to reach a spoon-coating consistency. Keep sauce warm on the lowest heat while shrimp cooks.

Sear the shrimp
Heat a large nonstick or cast-iron skillet over medium-high heat. Add the marinated shrimp in a single layer (work in batches if needed). Sear 1.5–2 minutes per side until opaque and just cooked through; shrimp should curl into a loose C shape. Avoid overcooking. Transfer shrimp to a plate while you finish remaining batches.
Garnish and serve
Transfer the sauced shrimp to a serving platter. Sprinkle with chopped cilantro or parsley and toasted sesame seeds if using. Serve immediately with lime wedges alongside for squeezing. Suggested accompaniments: steamed jasmine rice, buttered linguine, or a crisp green salad.
