Prepare Glass & Rim

Mix rim

On a small plate combine the coarse salt and optional sugar (if using). The sugar softens the salt and adds a slight balance to the pineapple's acidity.

Rub the lime wedge around the outer rim of a rocks or coupe glass (or the inner edge if you prefer). Dip the moistened rim into the salt mixture, twisting to coat evenly. Set the glass aside to let the rim dry slightly while you prepare the cocktail.

Make Cocktail

Muddle cilantro

In a cocktail shaker, add the packed cilantro leaves and the agave syrup. Gently muddle 6–8 times — just enough to release the cilantro's aroma and oils without shredding the leaves into bits.

Add liquids

Add the blanco tequila, dry curaçao, fresh pineapple juice, and fresh lime juice to the shaker.

Dry shake (optional)

If you want extra aromatic integration, perform a dry shake (shake without ice) for about 10 seconds to further mix the cilantro and juices.

Shake with ice

Add the ice for shaking to the shaker. Seal and shake vigorously for 12–15 seconds until the shaker is cold and well chilled.

Double strain

Fill the prepared glass with fresh serving ice. Double-strain the cocktail (using a Hawthorne strainer and a fine mesh strainer) into the glass to remove cilantro bits and small ice shards for a smooth texture.

Garnish & Serve

Garnish the drink with a pineapple wedge on the rim and a small cilantro sprig laid across the top. Optionally express a lime peel over the cocktail to add a citrus oil finish.

Serve immediately while cold.
