Prepare the Marinade

In a blender or food processor, combine scallions, garlic, thyme, brown sugar, soy sauce, lime juice, allspice, cayenne pepper, black pepper, and salt. Blend until smooth.

Marinate the Chicken

Place chicken thighs in a large bowl or resealable plastic bag. Pour the jerk marinade over the chicken, ensuring it's well coated. Marinate for at least 1 hour, preferably overnight in the refrigerator.

Cook the Chicken

Heat vegetable oil in a large skillet over medium-high heat. Remove chicken from marinade and cook in the skillet for about 6-7 minutes on each side or until fully cooked and crispy.

Serve

Remove chicken from skillet and let it rest for a few minutes before serving. Slather with additional jerk sauce if desired, and enjoy!
