Cook according to grits type: for quick grits, simmer 5–7 minutes, stirring frequently; for regular stone-ground or yellow grits, simmer 20–25 minutes, stirring occasionally to prevent sticking. If the grits thicken too much, stir in up to 1/4 cup additional milk or water to reach desired creamy consistency.

Heat a large skillet over medium-high heat and add 2 tablespoons oil. When shimmering, add parboiled potato cubes in a single layer (work in batches if necessary). Let cook undisturbed 3–4 minutes to develop a brown crust.

Toss potatoes and add sliced onion, 1/2 teaspoon smoked paprika, 1/4 teaspoon garlic powder, 3/4 teaspoon salt, and 1/4 teaspoon black pepper. Continue to cook, stirring occasionally, 6–8 minutes, until potatoes are golden and tender. If potatoes are browning too fast before tender, lower heat to medium and cover for a few minutes.

Bring a pot of water with 1 tablespoon vinegar to a gentle simmer. Crack each egg into a small cup and gently slide into simmering water. Poach 3–4 minutes for runny yolks. Remove with a slotted spoon and drain on paper towel.
