Chicken & Marinade

Pound and flatten
Pat the chicken breasts dry. If breasts are thick, place each between two sheets of plastic wrap and gently pound to an even thickness of about 1/2 inch so they cook evenly.

Make the marinade
In a bowl combine 2 tbs olive oil, 1 tbs apple cider vinegar, smoked paprika, garlic powder, onion powder, 1 tsp salt and 1 tsp black pepper. Whisk until blended.

Marinate
Brush or pour the marinade over both chicken breasts so they are evenly coated. Let rest at room temperature for 15 minutes or refrigerate up to 2 hours. Remove from fridge 20 minutes before grilling.

Grill the chicken
Preheat grill or grill pan to medium-high (about 400°F / 200°C). Oil the grates or pan lightly. Grill chicken 4–6 minutes per side until internal temperature reaches 165°F (74°C) and grill marks form. Transfer to a plate and let rest 5 minutes, then slice or leave whole to place on the bun.

Melt the cheese
When the chicken is about 1 minute from done, top each breast with 2 slices of white cheddar so the cheese melts from residual heat. If needed, tent with foil for 1–2 minutes to help cheese melt fully.
BBQ Drizzle & Finishing Sauce

Prepare the BBQ drizzle
In a small bowl combine 1/2 cup BBQ sauce, 3 tbs mayonnaise, 1 tbs honey, 1 tsp apple cider vinegar, optional 1/2 tsp hot sauce, 1/4 tsp salt and 1/4 tsp black pepper. Whisk until smooth — this is your BBQ drizzle/finishing sauce. Taste and adjust for sweetness or tang.

Warm the sauce (optional)
If you prefer a thinner drizzle, warm the sauce gently in a small saucepan over low heat for 2 minutes, stirring, then remove from heat and keep warm.

Prep produce
Slice the tomato into 1/4-inch rounds. Thinly slice 1/4 of the red onion. Remove two crisp lettuce leaves and pat dry.

Assemble the sandwich
Spread a thin layer of the BBQ finishing sauce on the bottom bun. Place a lettuce leaf, then the cheese-topped grilled chicken breast. Break 3 bacon slices in half and layer over the chicken. Add tomato slices, red onion, and 3 pickle slices. Drizzle 1–2 tbs additional finishing sauce (or plain BBQ sauce) over the toppings. Cap with the top bun.

Serve
Slice the sandwich in half if desired. Serve immediately with extra BBQ sauce on the side.
