    Make custard

    In a wide shallow bowl or baking dish large enough to hold a slice of bread, whisk together the eggs, whole milk, heavy cream, vanilla extract, granulated sugar, ground cinnamon, and salt until smooth and slightly frothy.

    Soak bread

    Arrange bread slices in a single layer and let each slice soak in the custard 20–30 seconds per side, or until the slice is saturated but not falling apart (thicker bread may need longer). Transfer soaked slices to a wire rack set over a baking sheet while you prepare the coating and heat the pan.

    Prep crunch

    Place the crunchy cookie or cereal in a large zip-top bag or food processor. Pulse or crush finely but leave some small crunchy bits for texture — aim for a mixture like coarse breadcrumbs (about 1/8–1/4-inch pieces). If using chopped nuts (or nut alternative), fold them in now. Transfer crushed mixture to a shallow plate or rimmed baking sheet.

    Add binding flavor

    In a small bowl, whisk melted butter with the brown sugar and salt. Drizzle over the crushed cereal/cookie mixture and toss gently until evenly coated — the butter helps pieces adhere to the soaked bread and promotes golden color when cooking.

    Coat bread

    Working with one slice at a time, press both sides and edges of each soaked bread slice into the crunch mixture, gently pressing so the coating adheres. Set coated slices on a wire rack for 2–3 minutes to help the exterior set slightly; this prevents the coating from falling off when cooking.

Cooking & finishing

    Heat pan

    Heat a large nonstick skillet or cast-iron pan over medium heat. Add 1 tablespoon butter or oil and swirl to coat. Keep the remaining butter/oil nearby to add as needed between batches.

    Pan-fry

    Place coated slices in the hot pan (do not overcrowd). Cook 2½–3 minutes per side, pressing gently with a spatula to ensure good contact; cook until the coating is deep golden brown and crisp and the interior is cooked through. Add more butter/oil between batches as necessary and adjust heat to prevent burning (lower to medium-low if the coating browns too fast).

    Finish and serve

    Transfer cooked French toast to a warm plate. Dust generously with powdered sugar and serve immediately with maple syrup and fresh berries on the side. For best texture, serve right away so the crunchy coating stays crisp.
