Pancake Breakfast

    Make batter

    In a medium bowl whisk together 0.75 cups flour, 1 tsp baking powder, 1 tsp sugar and 0.125 tsp salt until combined. In a separate small bowl whisk 0.75 cups milk, 0.5 of a large egg (beat one egg and use roughly half), 1 tbsp melted butter and 0.25 tsp vanilla. Pour wet into dry and stir until just combined — a few small lumps are OK. Let rest 5 minutes.

    Cook pancakes

    Heat a nonstick skillet or griddle over medium heat and brush with a little melted butter. For each pancake, pour about 3 tbsp batter (makes small kid-size pancakes). Cook 1.5–2 minutes until bubbles form on top and edges look set, then flip and cook another 1–1.5 minutes until golden and cooked through. Keep pancakes warm on a low oven (about 200°F / 95°C) while finishing remaining batter. Yield: 3–4 small pancakes.

    Serve pancakes

    Stack pancakes, top with 0.5 tbsp butter and serve with 2 tbsp maple syrup on the side.

Scrambled Eggs

    Crack 1 large egg into a small bowl, add 1 tbsp milk, 0.125 tsp salt and 0.0625 tsp pepper (if using). Whisk until blended and slightly frothy.

    Heat a small nonstick skillet over low-medium heat and add 0.5 tbsp butter. When butter is melted and bubbling slightly, pour in egg mixture. Let eggs sit undisturbed for 10–15 seconds, then gently stir with a spatula, folding curds from edges to center. Cook until soft and slightly set but still moist — about 1–2 minutes. Remove from heat (eggs will continue to set) and transfer to plate.

Breakfast Side - Fruit & Hash Browns

    Cook hash brown patty according to package directions: usually bake or pan-fry. For pan-fry, heat 1 tsp oil or a small knob of butter in a skillet over medium heat and cook patty 3–4 minutes per side until golden and crisp and heated through. Drain on paper towel.

    Prepare fruit: if using mixed berries and banana/apple slices, toss 0.5 cup fruit lightly with 0.25 tsp lemon juice to keep apples from browning. Place fruit on the plate beside pancakes and eggs.

Beverage (Choose one)

    Cold milk or juice: pour 6 oz of the chosen cold beverage (milk, apple juice, or orange juice) into a child-sized cup and serve with a straw.

    Hot cocoa: prepare a 6 oz serving of hot cocoa according to packet or house recipe (heat 6 oz milk or water, whisk in cocoa mix until smooth). Note: hot cocoa and hot tea are regular price; additional refills available for $2.99.

    Hot tea: steep a tea bag in 6 oz hot water for 3 minutes; serve with a small amount of honey or sugar on the side for older children if desired (not for infants).
