    Make custard

    Crack the 4 large eggs into a shallow wide bowl or baking dish large enough to dip bread. Whisk together until combined. Add 1 cup whole milk, 1 tsp vanilla extract, 1 tsp ground cinnamon, 1 tbsp granulated sugar and a pinch of salt. Whisk until smooth and sugar is mostly dissolved.

    Prep bread

    Arrange 8 slices of thick bread in a single layer on a plate. If slices are very fresh, lightly dry them on a rack or toast for 30 seconds per side so they soak without falling apart.

    Soak slices

    Heat a large nonstick skillet or griddle over medium heat and add 1 tbsp unsalted butter to melt. Working 2–3 slices at a time, submerge one side of a bread slice into the custard for 5–8 seconds, flip and soak the other side 5–8 seconds. Let excess drip off and place into the hot skillet. Repeat with remaining slices, adding the second tablespoon of butter when the pan looks dry.

    Cook

    Cook each slice 2–3 minutes per side, or until golden brown and set. Adjust heat as needed to prevent burning; a medium to medium-low setting keeps the centers from soggy while allowing browning. Cook remaining batches, adding small additional pats of butter if needed.

    Serve

    Keep cooked slices warm on a baking sheet in a 200°F (95°C) oven while finishing the rest. Serve 2 slices per child with maple syrup to taste and about 1/4 cup fresh fruit per serving if using.

Bacon

    Start bacon

    Place a large skillet over medium heat. Lay 8 slices of thin-cut bacon in a single layer in the cold skillet. Add 2 tbsp water — this helps render fat gently and prevents curling for kids' bacon.

    Cook bacon

    Turn heat to medium-low and let bacon cook, flipping occasionally, until fat is rendered and bacon is cooked through but not overly crisp — about 8–12 minutes depending on thickness and stovetop. For children who prefer chewier bacon, cook to the lower end of that range.

    Drain

    Transfer bacon to a plate lined with paper towel to drain excess grease. If making ahead, keep warm on a baking sheet in the oven alongside the French toast so everything is served hot.
