Sand Dollar Pancakes

Make batter
In a medium bowl whisk together 1.25 cups flour, 1 tbsp sugar, 1 tsp baking powder, and 1/2 tsp salt until combined. In a separate bowl whisk 1 cup milk, 2 tbsp melted butter and 1 large egg. Pour wet into dry and stir gently until just combined; small lumps are fine. Do not overmix.

Preheat griddle
Heat a nonstick griddle or large skillet over medium heat (about 375°F / 190°C). Lightly brush with 1 tsp oil or melted butter.

Cook pancakes
Using a 1/3-cup measure, pour batter onto the hot griddle to form circular 'sand dollar' pancakes about 4-4.5 inches across. Cook until bubbles form on the surface and edges look set, about 2–3 minutes. Flip and cook until golden, another 1–2 minutes. Repeat to make 6–8 pancakes total, keeping cooked pancakes warm on a plate tented with foil.

Cook egg
While pancakes cook or kept warm, heat a small nonstick skillet over medium-low and add 1 tsp butter or oil. Crack 1 large egg into skillet and cook to desired doneness: for sunny-side up, cover and cook until whites are set but yolk still runny (about 2–3 minutes); for over-easy, cook until whites set, flip gently and cook 10–20 seconds. Season with 1/8 tsp salt and a pinch (1/16 tsp) black pepper.

Cook sausage
If using sausage links: brown 2 links in a skillet over medium heat, turning to brown all sides, then reduce heat and cook through about 10–12 minutes total (internal temp 160°F / 71°C). Drain and rest 1–2 minutes.
To Serve

Assemble the Hungry Guppy: stack 3–4 sand dollar pancakes on a plate, place the cooked egg on top or to the side, and arrange bacon strips or sausage links alongside. Add 1 tbsp butter on pancakes if desired and serve with 1/4 cup maple syrup for pouring. Offer optional second side (hash browns, fruit, or extra meat) as requested.

Portioning and notes: recipe yields 1 hearty plate. Pancakes can be kept warm in a 200°F (95°C) oven while finishing other components.
