Prepare Squid
If not pre-cleaned, rinse the squid under cold water. Separate tubes from tentacles. Remove cartilage (quill) from inside the tubes, peel off the skin if desired, and slice the tubes crosswise into 1/2-inch rings. Pat tubes and tentacles very dry with paper towels. Place in a bowl, season with 1 tsp fine sea salt and 1/2 tsp black pepper, then add ice water and stir briefly. Let sit for 5 minutes to firm up, then drain and pat completely dry again.

Make Dry Mix
In a shallow bowl or wide baking dish combine 1 cup all-purpose flour, 1/4 cup cornstarch, 1/4 cup fine dry breadcrumbs (if using), 1/2 tsp baking powder, 1 tsp paprika, 1/2 tsp garlic powder, 1/4 tsp cayenne, 3/4 tsp coarse salt, and 1/2 tsp freshly ground black pepper. Whisk to fully incorporate and break up any lumps.

In a separate bowl whisk together 2 large eggs and 1/4 cup milk or buttermilk until homogenous.

Coat Squid
Working in small batches to avoid crowding, dredge a handful of dried squid rings/tentacles in the dry flour mixture, shaking off excess. Dip briefly into the egg wash, letting excess drip off, then return to the dry mixture for a final coating. Press lightly so the coating adheres. Place coated pieces on a wire rack while you repeat with remaining squid. Keep coated squid chilled if there will be more than 15 minutes before frying.

Heat Oil
Pour about 4 cups neutral oil into a heavy, deep skillet or Dutch oven to a depth of 1.5–2 inches. Attach a thermometer and heat to 350°F (175°C). If you don't have a thermometer, test with one coated piece: it should sizzle immediately and float.

Fry in Batches
Carefully lower a single layer of coated squid into the hot oil using a slotted spoon or spider. Fry for 1.5–2 minutes, turning once if needed, until golden brown and crisp. Do not overcrowd — work in 2–3 short batches depending on pot size. Remove with a slotted spoon and drain on a paper towel-lined tray or wire rack. While still hot, lightly sprinkle with flaky sea salt. Return oil to 350°F between batches if temperature drops.

Transfer fried calamari to a serving platter. Sprinkle with chopped parsley if using and serve immediately with lemon wedges and dipping sauce (marinara or garlic aioli). Recommend squeezing lemon juice over the calamari right before eating. Leftovers will lose crispness — reheat briefly in a hot oven (400°F/200°C) on a wire rack for 4–6 minutes if necessary.
