Beef Patties

Form Patties
Divide the 1 lb ground beef into two equal portions (about 8 ounces each). Gently form each portion into a patty about 3/4 inch thick and slightly wider than the bun. Do not overwork the meat; handle lightly. Use your thumb to make a shallow dimple in the center of each patty to help them cook evenly.

Season
Season both sides of each patty evenly with kosher salt (about 1/2 tsp per side total) and freshly ground black pepper. Lightly brush or sprinkle 1 tsp Worcestershire sauce over the top of each patty (divide between patties).

Cook Patties
Heat a heavy skillet or griddle over medium-high heat until very hot (about 3–4 minutes). Add 1 tbsp vegetable oil and swirl to coat. Place patties on the hot surface, leaving room between them. Cook without moving for 3 minutes to develop a crust. Flip once and cook 2–3 minutes for medium (adjust 1–2 minutes longer for medium-well). One minute before the patties are done, place a slice of American cheese on each patty, cover the pan with a lid or tent with foil, and let melt for about 1 minute.

Toast Buns
While patties are cooking, split the 2 buns. Spread softened butter (about 1/2 tbsp per bun top and bottom total) on the cut sides. Place buns buttered-side down on a separate skillet or on a cooler area of the griddle and toast over medium heat until golden and slightly crisp, about 1–2 minutes. Remove and keep warm.

Prepare Toppings
Thinly slice the 1/4 red onion into rings. Slice the tomato into 2 equal rounds (about 2 slices). Wash and dry the iceberg leaves and set aside. Lay out 4 dill pickle slices.

Sauce Spread
On the bottom bun spread 1 tbsp ketchup and 1 tsp mayonnaise (if using). On the top bun spread 1 tsp yellow mustard or place mustard on the bottom if preferred.

Assemble Burger
Place a lettuce leaf on the sauced bottom bun, add the cheese-topped patty, then layer tomato slice(s), red onion rings, and pickle slices. Cap with the toasted top bun.

Finish & Serve
Serve the cheeseburger immediately while hot. Optional: serve with fries, chips, or a pickle spear. Recommend a napkin — the burger will be juicy and melty.
