    Form and season patty

    Gently form the 0.5 lb ground beef into a patty about 3/4" thick, making a slight indentation in the center to prevent puffing. Season both sides with 1/2 tsp kosher salt and 1/4 tsp black pepper.

    Cook patty

    Heat a grill pan or skillet over medium-high heat and add 1 tablespoon vegetable oil. When shimmering, place the patty on the pan. Cook for about 4 minutes without moving to develop a crust. Flip and cook another 3–4 minutes for medium (adjust 1–2 minutes each side for desired doneness).

    Melt cheese & rest

    About 1 minute before the patty is done, top with 1 slice white cheese to melt. Remove patty to a plate and tent loosely with foil to rest 3–4 minutes while you finish the shrimp and toast the bun.

    Toast bun

    Spread 1/2 tablespoon butter on the cut sides of the bun. Place cut-sides down on the hot pan for 30–60 seconds until golden and crisp. Remove and set aside.

Cajun Shrimp

    Season shrimp

    Pat the 6 shrimp dry with paper towels. In a small bowl toss shrimp with 1 teaspoon olive oil, 1 teaspoon Cajun seasoning, 1/4 tsp smoked paprika, 1/2 tsp minced garlic, 1/2 tsp lemon juice, and 1/4 tsp hot sauce (if using) until evenly coated.

    Grill/pan-sear shrimp

    Using the same skillet (wipe if necessary) over medium-high heat, add a light drizzle of oil if pan is dry. Add shrimp in a single layer and cook 1.5–2 minutes per side until opaque and pink with slight char (internal temperature ~120–130°F). Do not overcook. Remove from heat.

Toppings & Assembly

    Prepare sauce

    In a small bowl mix 1 tablespoon mayonnaise with 1/2 teaspoon creole or Dijon mustard until combined. Spread the sauce on the bottom bun.

    Assemble burger

    Place a leaf of lettuce on the sauce-spread bottom bun, add the rested cheeseburger patty, arrange the 6 Cajun shrimp on top of the cheese, then top with sliced tomato, red onion rings (2 rings), and pickled jalapeños if using. Finish with the toasted top bun.

    Serve

    Serve immediately while shrimp are warm. Suggested sides: fries, coleslaw, or a simple green salad.
