    Mix and form patties

    Place the ground beef in a bowl. Add Worcestershire sauce, garlic powder, onion powder, kosher salt, and black pepper. Gently mix with your hands or a fork until just combined — do not overwork. Divide into 2 equal portions and form each into a patty about 3/4 inch thick with a slight dimple in the center (this helps even cooking).

    Cook patties

    Heat a large skillet or griddle over medium-high heat. Add 1 tablespoon vegetable oil and swirl to coat. When shimmering, add the patties and cook uncovered for about 3-4 minutes on the first side without pressing. Flip and cook for another 2-3 minutes for medium (adjust time for desired doneness). In the last minute of cooking, place 2 slices Swiss cheese on each patty, cover the skillet briefly (30–60 seconds) to melt the cheese. Remove patties to a plate and tent with foil to rest while finishing toppings and buns.

Mushroom & Onion Topping

    Sauté mushrooms and onions

    While the patties rest (or in a separate pan), heat a medium skillet over medium heat. Add butter and 1 teaspoon olive oil. When butter foams, add sliced mushrooms and onions in an even layer. Let them cook undisturbed for 2 minutes to develop color, then stir or toss. Continue cooking 4–6 minutes until mushrooms are browned and onions are soft and translucent.

    Finish mushrooms

    Stir in thyme, soy sauce, salt, and black pepper. Cook another 1–2 minutes so the soy sauce reduces slightly and flavors concentrate. Taste and adjust seasoning. Keep warm until assembly.

Cheese & Assembly

    Toast buns

    Spread 1 tablespoon softened butter evenly over the cut faces of the buns. In a clean skillet or on the griddle over medium heat, toast the buns butter-side down until golden and crisp, about 1-2 minutes. Remove and set aside.

    Prepare sauce

    Mix mayonnaise and Dijon mustard in a small bowl. Taste and adjust ratio to preference. Spread about 1 tablespoon of the mixture on the bottom half of each toasted bun.

    Assemble burgers

    Place a lettuce leaf (if using) on the sauced bottom bun, then set the Swiss-topped beef patty on top. Spoon a generous portion (about 1/3 cup) of the warm mushroom & onion mixture over the cheese. Add pickles if desired and cap with the top bun. Press gently to compact.

    Serve immediately with fries, chips, or a simple salad. Estimated internal temperature for medium is 145–155°F (63–68°C). Let guests request different doneness and adjust cooking times accordingly.
