Stock and inspect prepackaged items
Check each frozen item for intact packaging and proper labeling. Ensure mini ice cream cups, chocolate cups, fruit popsicles, sherbet cups, and frozen yogurt tubes are within their best-by dates and have no torn seals.

Portion into grab-and-go containers
For mixed assortments, prepare individual grab-and-go containers: place 1 frozen item per container (or 2 smaller items like yogurt tube + popsicle if desired) so each serving is single-portion and easy for kids. Aim for 12 assembled portions total from stocked items.

Add toppings where appropriate
If offering optional toppings for open cups (for example, if you convert a sherbet cup to a decorated cup), briefly remove the lid just before service, sprinkle 1 tablespoon of chosen topping (mini chips, sprinkles, or crushed graham) on top, then reseal with a clear lid. Do not leave opened items unattended in the freezer.

Include utensil and label
Place one small disposable spoon in or on each container as appropriate. Affix a label or sticker indicating flavor and any allergen notes (contains dairy, may contain nuts if toppings used).

Store for service
Return assembled grab-and-go containers to the display freezer at -18°C (0°F) or colder. Rotate stock using first-in, first-out (FIFO) so older items sell first.

Handling a variety selection
When a customer requests 'assorted frozen treat,' open the grab-and-go display and select one container. If a customer wants to choose, allow them to pick one sealed item from the organized bins and then package if needed. For mixed kids' orders, combine different sealed items in a single clamshell if requested, then re-freeze immediately if not taken.

Prepare topping station (if offering decorations)
Set up a cold-side topping station near the packing area with small portions of sprinkles, mini chips, and crushed graham in covered containers. Keep toppings refrigerated or in an insulated tray to avoid melting adjacent frozen items.

Apply toppings safely
Only apply toppings at moment-of-sale or just before placing an item in a presentation container. Use clean utensils to portion toppings (approx. 1 tablespoon per serving). Immediately re-cover and return the product to the freezer after topping if it will not be handed to the customer right away.

Sanitation and allergen control
Clean and sanitize the topping area before and after each shift. Use separate scoops for each topping and label allergen information on stickers to prevent cross-contact. If a customer requests no toppings, do not touch the sealed product.

Packaging and labeling
Use individual clear containers or clamshells sized for single portions. Include one spoon per container and affix a label with flavor, date/time assembled (if modified), and allergen notes. For sealed prepackaged items, simply place the sealed item into the clamshell and close it.
