Prepare the Fries

Preheat your oven to 425°F (220°C). Cut the russet potatoes into thin strips and soak them in cold water for at least 30 minutes. Drain and pat dry.

Season the Fries

Toss potatoes with olive oil, salt, and fresh thyme. Spread them out on a baking sheet in a single layer.

Bake the Fries

Bake in the preheated oven for 25-30 minutes, flipping halfway through until golden brown and crispy.

Prepare the Steak

Crush the black peppercorns lightly with a mortar and pestle or a rolling pin. Season the NY strip steak with salt and the crushed peppercorns on both sides.

Cook the Steak

Heat a skillet over medium-high heat and add olive oil. Once hot, add the steak and cook for 4-5 minutes on each side for medium-rare, or until desired doneness. Let rest for 5 minutes before slicing.

Serve

Serve the sliced steak alongside the herb-salt fries. Optionally, serve with garlic aioli on the side.
