Prepare the Chicken

Preheat your smoker to 225°F (107°C). Rub the olive oil all over the chicken halves. In a small bowl, mix the smoked paprika, garlic powder, onion powder, salt, black pepper, and thyme. Rub this spice mixture generously over the chicken.

Smoke the Chicken

Place the chicken halves in the smoker, skin-side up, and smoke for about 2 hours, or until the internal temperature reaches 165°F (75°C).

Prepare the Beans and Tomatoes

In a large skillet, cook the cured pork over medium heat until crispy. Add the pole beans and cook for about 5 minutes, then add the cherry tomatoes and chicken broth. Bring to a simmer and cook for another 10 minutes until the beans are tender.

Finish the Dish

Once the chicken is smoked, remove it from the smoker and let it rest for 10 minutes. Serve the chicken halves on a plate with the braised pole beans and tomatoes, drizzling with lemon juice before serving.
