Make the Mixed Berry Compote

In a small saucepan, combine the mixed berries and sugar. Cook over medium heat for about 5-7 minutes, stirring occasionally until the berries break down and the mixture thickens slightly. Remove from heat and let cool.

Prepare the Meringue

Break the meringue nests into bite-sized pieces and set aside.

Assemble the Sundae

In serving glasses or bowls, layer the vanilla ice cream, followed by a layer of mixed berry compote, and then a layer of broken meringue. Repeat the layers until the glasses are full, finishing with a layer of compote on top.

Garnish

Top with additional meringue pieces and garnish with mint leaves before serving.
